With saké making, experience is everything. To be true to tradition, we wanted to acquire the knowledge necessary to make a truly world-class Daiginjo. With over 20 years of saké brewing under our belt, and leveraging the centuries of expertise of our Japanese partners, Naginata was born. This represents the best-of-the-best expression of what is possible in American saké making.

Bright, fruity aromas of blueberry, banana, and grape are balanced by subtle dryness and flavors of Fuji apple, melon, and guava. Hints of pepper and licorice layer in the background leading to a smooth and lingering finish.


Our Toji

In 2018 we welcomed our new Toji/Master Brewer, Takumi Kuwabara. Takumi specializes in premium saké including Ginjo and Daiginjo styles. He comes to SakéOne with more than 26 years of saké brewing experience in both Japan and the U.S. His move to SakéOne is motivated by his desire to focus on brewing high-end saké, as well as the favorable location in Forest Grove, OR, where SakéOne has been producing saké for more than two decades. Takumi grew up in the rural countryside of Japan and chose to relocate his family to Portland as he felt it reflected the values of his childhood home.
