Honey Basil Superstar

1 oz. Momokawa Organic Junmai Ginjo
1 oz. Aviation Gin
6-8 Thai basil leaves
1/2 oz. Freshly squeezed lemon juice
3/4 oz. Clover Honey Syrup
2 oz. Club soda
Pour ingredients with the Thai basil leaves into a pint mixing glass.
Hand press with a muddler.
Fill with ice and shaker vigorously for 6 seconds.
Strain into chilled cocktail glass.
Garnish with a leafy Thai basil stalk.
